Here’s What You Can Do With All The Overripe Vegetables In Your Fridge!

We’ve all gotten carried away at the supermarket and bought more vegetables and produce than we actually need!

Now that we have all that vegetables just sitting in the fridge, aging away… What do we do about them?

Here are some helpful tips on ways you can cut down on your food waste, according to One Green Planet.

#1 Pickling

Vegetables that are becoming “too old” are perfect for pickling! 

Pickling is a process of soaking something in vinegar - and no, it doesn’t have to be just cucumbers. All you have to do is soak your veggies of choice in a mix of vinegar and some herbs and spices like salt, sugar, garlic or peppercorns. Put your vegetables and mixture together in a jar, and then leave it in the fridge for a few days.

Pickled vegetables are great garnishes for your dish! But, if you want to eat it straight out of the jar, you can, too!

#2 Roasting

Yum! Who doesn’t love some good roasted vegetables?

Roasting is one of the easiest ways to quickly cook up vegetables that have been sitting in your fridge for days. Just chop them up in small bite size pieces, throw them in the oven with a little bit of olive oil, or if you want to have a little more flavour, you can add some spices in your vegetables, too!

Once they are roasted to golden brown, there is a whole host of possibilities for what to do next - you can eat them straight from the baking pan, or you can incorporate them into other dishes as well, and it'll be wonderful either way!

#3 Make veggie chips!

Craving for potato chips? Why not choose the healthier option!

Just like roasting, vegetable chips are as easy as putting your veggies into the oven. But make sure you slice them up thinly first, into a... you know it, chip! The choices are endless, you can make zucchini chips, kale chips, okra chips, sweet potato chips or eggplant chips!

#4 Make soup and stew

We all love soup! Have it with a piece of bread and just call it a day.

Soups or stews are the perfect comfort food and it’s super easy to make, too! Let’s be honest, what’s easier than tossing a bunch of vegetables in a pot with some broth? Just grab your leftover vegetables from the fridge and get creative!

Overripe vegetables may not be ideal, but it doesn’t mean they’re unusable in the kitchen. 

It’s always better to use them to avoid wasting food and wasting money, and it’s great for the environment, too. Hope this helps!
